I've never been to Louisiana, but I'm all for letting the good times roll. I've never seen a crawdad, much less eaten one, so I looked it up. Apparently they're called "mudbugs"? One chef said, "The tail is the meat, but the head is the essence of life." Sounds like I really have been missing something.
